With dry-farmed fruit from Mr. Wei farming in Cloverdale, this wine was made whole cluster, semi-carbonic, with gentle pump-overs for one week, and then elévaged in neutral barrels for 8 months. From native yeasts, and no filtration, we have a living and evolving juice. What began as Japanese ume plum + shiso, then gave us summer strawberries, and now fresh raspberries, still unfurling wild herbs, ever showing the secret valley it was born from. Always light + bouncy. What has never changed is the thirst to share + feast with friends.
Pair this with red sauce and meatballs, Peking duck, banchan, dumplings, or backyard barbecue.
